Realizing that such heat is not for everyone, Alton also devises Orange Glazed Chicken Wings that marry sweet and sour, salt and spice in a delicious glaze.

When water turns to vapor, that pressure can do work – like push a locomotive, or make a really great pastry called pâte à choux.
